Cuban Plantain Soup

This very Cuban soup, is as its name implies, made from plantain, green plantain or specifically "macho" plantain. There are, naturally, several recipes for Cuban Plantain Soup, this is the traditional recipe from the eastern Cuba.

Ingredients:

  • 3 large green plantains, peeled and sliced into small chunks 
  • 2 beef bouillon cubes 
  • 8 cups water 
  • ½ cup chopped onion 
  • 2 garlic cloves, minced 
  • ¼ cup scallion, chopped 
  • ¼ teaspoon salt 
  • ¼ teaspoon fresh ground pepper 
  • ¼ teaspoon ground cumin powder 
  • 2 tablespoon cilantro for garnish

 

Directions:

Boil the plantains in the stock until tender, 15 to 30 minutes, depending on the ripeness of the plantains. Remove the plantains with a slotted spoon and place in a bowl. Mash the plantains into a smooth, thick paste and add to the stock, stirring to blend well.

Add the cilantro, lime juice, salt, and pepper and simmer covered for 15 minutes. Combine the bread and almonds in a food processor and process into a thick paste. Stir the almond mixture into the soup immediately before serving.
