The Tamale casserole is one of the favorite dishes of the traditional Cuban cuisine. This dish is a type of polenta, cooked with slow fire, seasoned with a sauce of garlic, onion, pepper, tomato paste in olive oil, salt, dry wine and pork. Feel free to play with this recipe!
Ingredients:
- 1 lb. ground pork meat
- 4 garlic cloves, minced
- 1 onion chopped
- 1 green pepper chopped olive oil for frying
- 1/3 cup tomato sauce
- 1/4 cup red wine
- 2 cups ground fresh corn (may substitute frozen)
- 3 cups water
- Salt & pepper to taste
- Juice of one lemon
Directions:
Cut meat into small cubes and season with garlic and lemon. In a pan, fry the pork in a little olive oil. Add onion and green pepper and continue frying at low heat until the onions are soft. Add garlic, tomato sauce and wine.
Mix the corn with the water, strain, and add to the meat.
Cook for approximately 1 hour, stirring occasionally. The finished product should be thick and not runny. Salt and pepper to taste.
